I hope you are all doing great! I’m so excited to be guest-posting on Steffy’s amazing blog this month! Being a sucker for cake, I had to share my favorite vegan muffin recipe with you. Hope you enjoy the recipe and happy baking!

You will need:

1.5 cups baking flour
1 tsp baking powder
1 tsp Baking soda
1 tsp cinnamon/nutmeg
3/4 tsp salt
5 large bananas/mashed
1/2 cup sugar
1/3 cup canola/vegetable oil
1 tsp vanilla essence
1 cup fruit of choice (I used diced strawberries and blueberries)

Preheat your oven to 180 degrees celcius (375 farenheit). Chop up your fruit and mash your bananas. If you can resist eating them all.

Sift and whisk dry ingredients in a bowl. This will aerate the flour and make for super fluffy muffins.

In a separate bowl, combine mashed bananas, oil and vanilla essence.
Then with some coordination, add in the dry ingredients to the wet ingredients. A little at a time making sure not to over mix .

Fold in the chopped and whole fruit of your choice. Careful not to overmix and let out that air we worked oh so hard to bring in when sifting the flour.

Pour batter into lightly oil-greased tins and bake for 20-25 minutes or until an inserted toothpick comes out clean.

Go on now, take a bite and marvel at the yummy veganism of it all. Mind blown!
